Going to try Lawry's SW Chicken Skillet recipe

My family is looking for some new dinner ideas!  We are tired of eating the same things every night, especially on week nights.  I was recently sent some samples of Lawry's spices and we are looking forward to trying them out.  We've been using their seasoning salt for years.  One of the first recipes we are going to try is this one:


LAWRY'S® SOUTHWEST CHICKEN SKILLET

Ingredients
  • 1 tablespoon oil
  • 1 1/4 pounds boneless skinless chicken breast tenders
  • 1 package Lawry's® Southwest Chicken Skillet
  • 1 can (15 ounces) black beans, drained and rinsed (optional)
  • 1 can (14 1/2 ounces) diced tomatoes, undrained
  • 1 can (15 1/4 ounces) whole kernel corn, undrained
  • 1 cup instant white rice
  • 1 cup water
  • 1 cup shredded Mexican cheese blend
Directions
  1. Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 5 minutes or until lightly browned.
  2. Stir in Seasoning Mix, beans, tomatoes, corn, rice and water. Bring to boil. Reduce heat to medium; cover and simmer 10 minutes or until chicken is cooked through and rice is tender. Remove from heat. Stir to mix well.
  3. Sprinkle with cheese. Cover. Let stand 5 minutes or until cheese is melted.
Southwest Burritos: Prepare as directed in Steps 1 and 2, decreasing water to 3/4 cup. Spoon mixture into large flour tortillas. Sprinkle with cheese. Roll up and serve.

It looks pretty easy and I think the whole family will eat it.  :-)
